Kona coffee, macadamia and Quincy melon

The flavours give the shop away before anything else does. Kona coffee, macadamia nut and coconut are the Hawaiian half of the case, and Quincy melon is the Japanese one, a cultivar prized enough to justify a flavour of its own rather than a generic melon scoop. Everything is made in house, which is the claim the name itself carries and the reason the list stays short and specific instead of running to thirty tubs.

A converted house by Kugenuma beach

Hilo works out of a converted house at Kugenuma Kaigan, a few streets back from the water on the Shonan coast. The room is small and homey with simple casual seating, family-friendly and built for a stop after a walk on the beach rather than for a long sit. That setting explains the format: a scoop counter serving a stretch of coast where people arrive on foot, sandy and unhurried, in the middle of a day spent outside.

The shop also ships nationwide within Japan, which turns a local scoop counter into a dessert maker with a much wider reach. That distinction matters for how the ice cream is made: a product that has to survive packing and delivery has to work outside the moment of the scoop. In Fujisawa, order across the range rather than settling on one flavour, taking Kona coffee for the roasted side, macadamia or coconut for the Hawaiian register, and Quincy melon for the one that could only be Japanese.
