Why go

About fifteen coffees are open on any given day here, all single origin and all roasted light. Glitch Coffee and Roasters GINZA is the Ginza branch of a Tokyo roaster founded in 2015 out of Jimbocho, and it opened in 2023 with the brand's purpose unchanged: origin-driven coffee served as, in its own phrase, a cup for your valuable time.

Fifteen single origins, all roasted light

There is no house blend to fall back on. The board is a rotating list of origins, lots and flavour profiles, and the roasting stays light so that the farm and the processing method remain legible in the cup. Two coffees show what that sourcing looks like at its top end. Colombia Tolima Montreal, a 2023 Cup of Excellence winner, runs to orange blossom, honey, jasmine tea, tangerine and apple. Colombia Risaralda Milan, a Geisha, gives jasmine, green apple, honey, muscat, green tea and cane sugar. Those are competition lots, and they are why people order by name here rather than by drink.

The brew happens in front of you

Counter service keeps the attention where the shop wants it. Guests watch the pour and drink immediately after extraction, so preparation is part of the visit rather than something done out of sight. That matters more with light roasts, where aroma, acidity and finish shift noticeably in the first few minutes. The Ginza room is compact and counter-oriented, with limited seating and plenty of takeaway, closer to a tasting bar than a lounge. Staff will steer the choice if you describe the flavours you like and whether you want filter or milk, which is the practical way through a menu that changes bean by bean.

Order the Geisha filter first

Take a Geisha filter to start. The Colombia Risaralda Milan shows what the roastery chases in that variety, jasmine and muscat over green apple and cane sugar, and floral coffees like it need the careful extraction and clean roast profile this counter is built around. A light-roast single-origin pour-over is the other obvious opening, particularly on a day when a Cup of Excellence lot such as Colombia Tolima Montreal is on the board. Either way, choose the coffee before the format: here the specific lot is the order, and the brew method is only how it reaches you.

Frequently asked questions

What should you order at Glitch Coffee and Roasters GINZA?

A Geisha filter, if one is open. The Colombia Risaralda Milan shows what the roastery chases in that variety, jasmine and muscat over green apple and cane sugar. Otherwise take any light-roast single-origin pour-over, especially a Cup of Excellence lot such as Colombia Tolima Montreal. Choose the coffee first, the format second.

What kind of coffee does the Ginza branch serve?

Single origins only, all roasted light, with roughly fifteen open on any given day and no house blend behind them. The list rotates through origins, lots and flavour profiles, so the cup changes week to week. Staff will narrow it down if you say which flavours you like and whether you want filter or milk.
