The chef trained in Tokyo and then in France, including five years under the pastry chef at Le Bristol in Paris, and the shop takes its name from a book that chef wrote. For layers, Mille-feuille Vanille is the other first order, with cream and custard between sheets of pastry under a brûléed top that adds a faint smoke. Chocolate goes in two directions. Précieux Chocolat uses the house blend with Valrhona Caraliv across eleven layers, while Mûrier sets chocolate mousse and crème brûlée against blackberry and dacquoise. For something familiar done carefully, the strawberry shortcake uses Kyushu cream and a lightly sweet sponge, and the cheesecakes run from a flourless half-baked version with lemon jelly to a classic built on Brittany cheese and an almond base.
