The setting is a resort one. This is the flagship Emma's, inside the World Equestrian Center in Ocala, serving hotel guests, equestrian-event visitors and general resort traffic, which is why it functions as a stop rather than a destination in itself.
The look leans old-world: a tastefully designed cafe room, quiet and classic, with the macarons and European-inspired pastries doing much of the decorating. It works for a morning pastry, a coffee between rings, or a dessert run late in a long day on the campus, and it is one of several dining concepts sharing the same grounds. The Emma's name has since grown past this counter, but the hotel location remains the original showcase and the one the pastry programme was built around.
