Single origins run the whole programme

Espresso here is single origin by default, which is the first thing separating this counter from the cafés around it. Stereoscope opened its first Korean store in April 2025 inside Galleria's Gourmet 494 food hall in Gangnam, bringing over a roastery concept that a group of baristas and Q-graders started in 2013. The bar is open and deliberately visible, a La Marzocco Strada and a large Swan grinder at the front of it, so the making of the drink is part of what you are buying.

The bean list rotates and is named in detail. Releases have included Colombia Peñas Blancas Ombligon and Honduras La Fortaleza, while the Seoul bar has poured Colombia Diviso Ciroso as a single espresso and a Sudan Rume from Colombia's Rivera farm as brewed coffee. The house frames its buying through what it calls the Five Elements, altitude, soil, fauna, climate and the farmer, with the roaster as the last of them. In practice that means seasonal, origin-specific coffee rather than a broad drinks list.

A design-led counter inside a luxury food hall

The setting shapes the visit. Gourmet 494 is the basement food market of a luxury department store, curated around high-end Korean food and drink, so this is a polished retail stop rather than a neighbourhood coffee run. The room is built to be looked at, with equipment and beans displayed as part of the product.

Design is not incidental to the brand. Its identity and packaging came from the Oslo studio OlssønBarbieri and have collected international design awards, and the interiors of its American shops have been recognised in their own right. In Seoul that background meets an open bar where the machine, the grinder and the bean shelf do the selling.

Order a single-origin espresso, then the soft ice cream

Start with the single-origin espresso, the sharpest read on the roasting; Colombia Diviso Ciroso is one example of what has been served here. For something longer, brewed coffee such as the Sudan Rume from the Rivera farm gives the same beans room to open up.

Then order the espresso soft ice cream. It is made with single-origin espresso and reads closer to a precise coffee ice cream than a sweet dessert, with the aroma of the shot still in it. The 아인슈페너 is the other house drink worth knowing, a nutty short americano under soft, dense handmade cream, and it is the most comfortable thing on the board if espresso feels too severe.
