Signature milk drinks and a rotating filter

The drinks list has a house identity rather than a generic espresso menu. Honeybee White and Honeybee Latte are the signatures, sweet-leaning milk drinks built to be recognisable, and La Vie en Rose comes as a standard drink or as a latte. Against them sits the Seasonal Geisha filter, which is the serious order: geisha is the varietal specialty coffee treats as its show pony, and running it seasonally on filter is how a roastery says it wants to be judged on the beans.

Single origins rotate, so the filter side is worth asking about rather than assuming. The bean counter is not decoration either, since what is displayed is what has been roasted and what can be taken home.

Start with the Honeybee White, the drink most associated with the bar and the quickest way to understand its house style. Then order the Seasonal Geisha filter, which is where the roastery side shows most clearly and where the rotating origins are on display. If you want something to eat, the jambon beurre sandwich is the food signature, plain enough that it stays out of the coffee's way.
