Four ranges, all from the tropics

The roasting here is sorted into four named ranges, and knowing them is most of what you need. Trópico covers the adventurous Colombian finds; Esencia is the social and environmental line, worked with communities and women producers; Privilegio holds the nano-lots, rare varietals and competition coffees; Vino Silvestre is given over to naturals dried with the pulp on and no water, which is where the fruit-forward, fermented profiles come from.

Beans are sold as well as poured, with a monthly subscription of three seasonal bags carrying exclusives, pre-releases and producer information. A honey caturra from Tangua, in Nariño, is the kind of lot that turns up on the shelf. Tropicalia opened on 1 December 2021 and was placed at number nine in South America on The World’s 100 Best Coffee Shops for 2026.

A roastery that behaves like a dining room

The Bogotá roaster-café is built for staying. The invitation is to gather, talk, have breakfast, eat a full meal or take weekend brunch, always with the coffee at the centre, and the design carries the same tropical, exploratory idea across the room, the packaging and the printed material.

That makes it less a quick espresso bar than a place to spend an hour or two over Colombian coffee and a plate, with the retail shelf and the subscription running alongside the service. Coffee is sold across the counter and off the shelf at the same time, so a weekend brunch can finish with a bag of the same lot that was in the cup.

Order the zucchini cake

Torta de Zucchini is the dish to notice: zucchini cake with 68% Arauca chocolate, marjoram whipped cream, candied nuts and petals. It is the clearest sign that the kitchen is doing more than supporting the coffee.

Breakfast shows the same direction. Tostada de Aguacate brings avocado, mango pico de gallo, sprouts and a poached egg; Huevos con Trucha y Kale pairs two poached eggs with cheese sauce, trout, sprouts and brioche; Waffle Provincia is a yucca waffle with avocado, fried eggs and bacon. The bowls are the lighter route, with Bowl Selva built on organic leaves, marinated chicken, coleslaw, two styles of quinoa and avocado, and Bowl de Trucha on trout, avocado, native potato chips, kale and cherry tomatoes. Order coffee from one of the four ranges first, then eat around it.
