Rufous is filter-only, and that single decision explains the room. The bar does not build lattes, cappuccinos or flat whites; it pours by hand, one cup at a time, to show the differences between origin, roast and process. It was established in 2007 by two people who left corporate careers to push Taiwanese coffee somewhere more serious, and it has become the island's most internationally recognised roastery, the only Taiwanese café on The World's 100 Best Coffee Shops list, ranked #85 in 2025. The name comes from the Latin rufus, meaning reddish, for the colour of roasted coffee and the warmth of the room, and the original branch keeps a modest frontage, a bar-centred layout, dim amber light, wooden furniture and walls layered with handwritten postcards, travel photographs and customer artwork.

The room is part of the identity rather than a backdrop for the cup. It reads as a retro American café, closer to a 1970s or 1980s New York coffee house, with low lighting, vintage chairs, wooden tables and everything arranged around the bar. That plan matters, because guests watch the hand-pouring and the roasting at close range, which turns a cup into a process rather than a transaction.
The neighbourhood explains the crowd. Students, faculty and young professionals from the academic and working life nearby have long treated it as a focused room for reading, conversation and work, and a later Zhongshan branch in a quieter alley works as the calmer counterpart to the busier original. In both, the mood stays attentive and unhurried, with low jazz or classical in the background and a sense of community built out of accumulated notes and images.

The roasting works with Ethiopian coffees including Yirgacheffe and Sidamo, Colombians from Huila and Nariño, Brazil's Sul de Minas, Kenya's Nyeri and Guatemala's Antigua, and the processing is part of the conversation: Ethiopian naturals lean floral and citrus, washed Colombians toward nuttiness and caramel sweetness. Brewing runs on manual setups such as the Hario V60 and Kalita Wave, with controlled water temperature, grind adjusted by origin, pre-infusion, main pour and draw-down.
The other signature is the ice-drip coffee, made in a slow tower over six to eight hours and served smooth, aromatic and low in acidity from a glass bottle with a wooden stopper. Food stays secondary: quiche, cheesecake and seasonal cakes, counter items meant to support the coffee rather than turn the place into a restaurant.
