Siphon, espresso, and about a dozen single origins
Coffee Sweet is one of the oldest specialty coffee rooms in Taipei and it has stayed narrow: single origins, espresso, siphon brewing and close attention to what is in the cup. There is no broad café menu underneath it and no attempt at one.
The brewing is unusually specific. A Synesso machine handles espresso and a siphon handles the rest, and the owner’s argument for siphon is control: it holds temperature and finds each coffee’s own sweet spot. The siphon is wrapped in cloth to speed the drawdown, a technical decision rather than a piece of theatre for the room.
The bean list runs to roughly twelve single origins at a time, many of them from Ninety Plus. Kenya Thimu turns up as a siphon order, alongside beans from Panama and Ethiopia, a coffee called Song of Solomon, Panama Geisha and Panama Los Cantares Geisha Natural. Cups tend to be sweet and mild, sometimes served in a tea cup as though they were black tea, and an iced latte and a hot cappuccino sit on the same list.
A small room that asks for attention
The space is intimate and understated: a plain interior, a few tables and chairs, a couple of stools at the bar, more small room than café. It sits down an alley, quiet and clean, and the atmosphere comes from the ritual rather than the décor.
The house rules follow from that. Photography is not encouraged and there is no Wi-Fi, so a visit is built around tasting and conversation rather than screens. Service runs through the owner’s guidance, which is why the card basket matters: you choose, and then someone tells you what you chose.
What to expect before you go
Expect a coffee room rather than a restaurant. Food is a small selection of pastries and nothing beyond it; the range of beans and the brewing are the reason to come.
Order by method. Take a siphon cup first, because that is where the shop’s argument lives, and let the card basket decide the coffee itself. If espresso is the preference, the Synesso covers it, and the cappuccino is the milk drink most often praised here. Friendly owners, a homey room and a small window view of a big tree and plant pots complete the picture: modest space, serious coffee, and a visit centred on the cup.
