Why go
Cannoncini by the thousand
Up to 2,000 cannoncini leave the laboratory here on a busy day, each one crisp puff pastry piped with pastry cream, and that single number explains most of what Pasticceria Roberto does. The Erbusco house opened in 1981 and is now led by the founder's son, Giovanni Cavalleri, who has kept the counter broad but precise: macarons, panettoni, colombe, bussolà, pralineria, piccola pasticceria, torte, croissants, breakfast cakes and biscuits. Macarons arrived early here by Italian standards. Large leavened cakes carry the calendar, especially at Christmas and Easter, and the panettone range shows the house style most clearly: the traditional version with candied orange cubes, raisins and an amaretto glaze; chocolate and walnut; Goloso with marrons glacés, ginger and apricot; Tarte Tatin with candied apples and caramel chocolate; and Vivilo, a vanilla-leavened dough with candied apricots.
A renovated farmhouse in Franciacorta
The shop occupies a renovated Franciacorta farmhouse, and its rooms grew in phases around pastry, bar-caffè service and hospitality rather than being drawn as one scheme. The enclosed portico was adapted for year-round use with pivoting windows, heating and air conditioning while keeping an outdoor feel through teak tables, plastic chairs with teak seats and suspended green plants. Another room became a small library, with pastry books, comfortable furniture, antique tables and softer light. The bar counter is Botticino marble, tied to the locale's beginnings. That layered architecture matches the operation: coffee and a breakfast pastry, a longer sit in the caffetteria, the lunch offer, or the Vivilo restaurant and event side, all at the same address.
What to take from the counter
Start with the cannoncino, the house benchmark, then follow the counter by time of day and season. Mornings belong to croissants, breakfast cakes, biscuits and small pastry alongside coffee. For a shorter sweet sequence, move to macarons, pralines or piccola pasticceria. For celebrations and gifts the weight shifts to torte, colombe, panettoni and bussolà, and during the holidays the panettone range is the clearest read on the kitchen's ambition. Savoury work is not the main identity but it exists: the lunch offer runs alongside pizza and focaccia made with Petra 0101HP and 0102HP flours. A first visit is best kept pastry-led. Cannoncino, then macarons or a breakfast sweet, then whichever leavened cake is leading the counter that month.

Frequently asked questions
What should I order first at Pasticceria Roberto?
The cannoncino. It is the house benchmark, made in quantities of up to 2,000 a day, and it shows the crisp puff pastry and pastry cream that the rest of the counter is built on. After that, macarons or piccola pasticceria for a short sweet sequence, or a seasonal leavened cake when panettoni, colombe and bussolà take over the display.
Is Pasticceria Roberto only a pastry counter?
No. The renovated farmhouse holds a caffetteria, a small library room and the Vivilo restaurant alongside the pastry laboratory, so a visit can be a coffee and a croissant, a longer sit with a cake, or a full lunch. Pizza and focaccia made with Petra 0101HP and 0102HP flours sit on the savoury side of the same operation.
