Light roast, filter first

The brand was founded in Akihabara in 2019 and now runs three shops across Tokyo, with sisters in Asakusa and Ginza. The name comes from the Finnish word for lily of the valley, Finland’s national flower, and the shop attaches it to the idea that happiness returns again.

The core order is filter-led: light-roast pourover, espresso, milk-based coffee, matcha latte and homemade cheesecake. The bean list gives the café its specificity, running lots such as Colombia CGLE Las Margaritas, Colombia Mazatolan Peach, Honduras Santa Lucia Geisha, Colombia El Paraiso M3, Colombia Finca Milan Nitro Melon, Colombia Juan Carlos Geisha Washed, Peru El Morito Geisha, Colombia Granja Paraiso 92 Geisha and Colombia Granja Paraiso 92 Koji, with Rwanda washed, Ethiopia Guji Shakiso and Tanzania Acacia Hills also turning up on the bar.

A calm room in a loud district

Akihabara outside is electronics, manga, anime and heavy foot traffic. Inside, the room is small and quiet, with a handful of tables and counter seats. It works for a morning filter, an afternoon espresso or a cake-led pause rather than for anything longer, and there is Wi-Fi, power at the tables and a 90-minute limit on the seat.

Service does a lot of the work. Staff walk guests through the rotating lots, and coffees can arrive with cards listing tasting notes, which turns an order into a short tasting rather than a transaction. The note language runs bright and aromatic: shine muscat, plum, rose hip, lemon verbena.

Order the pourover first, then the cheesecake

Start with pourover for the clearest view of the light-roast style. Hand drip sits alongside espresso, so the menu covers both slow filter drinking and shorter orders, but the filter is where the roasting actually shows.

The house brewing method is published and precise: 15g of beans to 240g of water at a 1:16 ratio, water at 88 to 92°C, a 50g bloom stirred with a spoon, then pours at 0:40 and 1:15. The iced version uses 17g of beans, 150g of water and 120g of ice on the same bloom-and-pour timing, dripping straight onto the ice. After the coffee, add the homemade cheesecake, which is the recurring food signature, though the rest of the food changes day to day.
