Coffee in the morning, a glass of wine later, and pastries in between: Fairways runs one counter across two moods. It sits inside Innisbrook in Palm Harbor as the resort's modern café, set up for eating in or carrying out, and the Starbucks name is behind the drinks.

The beverage side is the recognisable one. Fairways proudly pours Starbucks, so the hot and iced drinks are the familiar builds rather than a house espresso programme with its own roaster behind it. Food stays in café territory: pastries, tarts, snacks and light bites, all of it sized for a stop rather than a sitting. Tarts are the one thing in the case that reads as more than a grab. The wine bar is the second half of the name, and it is what changes the room's purpose after lunch, with the lighter food meant to be eaten alongside a glass.

A resort counter with two speeds

The setting decides who uses it. Innisbrook's dining venues serve resort guests, golfers, members, conference attendees and visitors coming in from outside, which gives Fairways a wider catchment than a street-corner café would have. Golfers coming off the course and guests moving between a meeting and the next thing are the two crowds it exists for. What it is built for is low friction: modern, casual, quick, and positioned for people moving between one thing and the next rather than settling in for a long meal. Nobody arrives here as a destination, and the place is designed with that understood. It is a convenience counter done well, not a chef-driven dining room, and it is more useful for being honest about which of the two it is.

Plan it as a stop, not a meal

Use Fairways for what it does cleanly. A hot coffee or an iced drink before a round, a pastry or a tart mid-morning, snacks and light bites through the afternoon, and a glass of wine when coffee has stopped being the answer.
