Buddy Brew roasts its own coffee, and the clearest way to read the bar is a straight espresso, then a cappuccino or americano that keeps milk in a supporting role. The house cold coffee is BOLT Cold Brew, poured in Original and Nitro versions, the nitrogen-infused one giving a smoother, draft-like texture. Hot brewed coffee matters as much as espresso at a roaster-led café, and it is the order that shows what the roast is doing without anything else getting in the way. Pastries are the natural thing to eat with either, and the full-service espresso bar builds lattes and cappuccinos to order rather than treating coffee as an afterthought. Hyde Park is the one to visit

The Hyde Park flagship is where the roasting identity and the neighbourhood role meet, and it remains the clearest expression of what the company is. It sits at the northern edge of Hyde Park, near downtown Tampa and the University of Tampa, and draws neighbourhood regulars, students, and people working between obligations. The connection to production is the difference: a working roastery gives the room its smell and its pace as much as its coffee. The group has since spread across the city, to Armature Works, Bay to Bay Blvd, the University of South Florida, Tampa International Airport, and downtown’s Park Tower, but the flagship carries the working-roastery character rather than a version of it, which is why it is worth choosing over a more convenient branch.

Each newer site adapts the format to its setting. Armature Works puts a full-service coffee and espresso bar inside a historic trolley depot; the University of South Florida café sits in the Judy Genshaft Honors College, a building known for soaring ceilings and cantilevered study pods, and works as an amenity for students, staff, and visitors. Service is practical counter service everywhere. Food stays in the café lane: pastries alongside coffee, bagels on the grab-and-go side at the airport, and a fuller lunch menu at some branches. That is the right expectation to bring, a roaster’s café rather than a restaurant with coffee attached to it. Go to Hyde Park for the coffee and to the others for convenience, and the cup will be the same either way.
