Panettone, colomba and the mother yeast

Panettone is the clearest signature. The house has made the festive leavened cake for more than twenty years, working to its own disciplinare with Italian or French butter, Italian candied fruit and Australian raisins, and without preservatives, colourings, emulsifiers or additives.

The range is unusually specific. Alongside Panettone Classico and Panettone Classico Milanese sits Mandorlato, with whole almonds and sugar granules. Regional versions run on Aglianico Irpino DOCG, Fiano di Avellino DOCG and extra virgin olive oil; others carry dark chocolate, organic candied figs, cedro, orange, lemon, marron glacé, pineapple, mango and papaya. The house names them PanVino al Fiano Irpino, PanOlio, PanMimì, PanettonMarronGlacè, CiocoPan, PanAgrumi and Fichissimo. The same thinking extends to Colomba Classica, Caramello Salato e Cioccolato Bianco, Cioccolosa, Gastronomico Irpino, Fior di Semola, Mela Annurca IGP e Cannella, Colomba Vesuvio and Pastiera Lievitata. The panettone took 13th place in 50 Top Italy’s Top Panettone 2022, with the Mulino Caputo Award.

More than a pastry counter
