A pastry showroom rather than a café
The Nola showroom, opened in December 2016, gave the house a 400-square-metre stage in Campania, and it behaves like one: laboratorio behind, terrace outside, and a case organised by format rather than by course. Mignon for variety, monoporzioni for single desserts, torte da banco for slices, celebration cakes for the occasions that need them, with bakery items, chocolate, panettone, colombe and Easter eggs in their seasons. The style is Franco-Neapolitan, the result of training in the Vesuvian area followed by a formative Paris period, which is why butter-worked breakfast pastries, cornetti and macarons sit beside savoury pastry and Campanian classics.

Start with the leavened side. A panettone gives the fullest picture: sourdough, the long rise, nothing added for colour or shelf life, and a crumb built by fermentation. A colomba does the same job in spring. Then cross to chocolate, which is not a sideline here; pralines, truffles and the origin-led pieces show where the French training went.
