Order a filter at any of the six Lisbon rooms and it will be coffee The Folks roasted itself, at a dedicated roastery in the city. The brand started in 2022 in Baixa-Chiado and built outward, pairing that coffee with a brunch kitchen rather than running a drinks-only counter.

Six rooms, one roastery

Chiado is the original. Alfama has a terrace under an old tree; Sé looks onto the cathedral from a room that sets modern design against ancient stone; Blue Street is an old-town corner with a shaded terrace and cobbles; Santos is light-filled and soft-furnished; Belém runs a sun-facing terrace between the river and the park.

They share a register rather than a floor plan: morning light, terraces, comfort, time to sit. The World's 100 Best Coffee Shops placed The Folks at number 88 in 2026, and the brand was also recognised at the 2025 European Coffee Trip Awards.

What the roastery is doing

The coffee list reads by origin and by purpose. Colombia carries most of the range, through Coconut Splash, Rocket Flower, Monte Sereno and the Siesta decaf; Ethiopia supplies Sunset for espresso and Chelchele Funk and Floral Echo for filter; Costa Rica appears as Abraço and Brazil as Vale do Mel.

Tasting notes stay in the sweet and fruited range: floral and citrus at one end, red currant, black currant and pineapple in the middle, caramel, brown sugar, nougat, honey and toffee at the other. Formats cover espresso, filter, omni roasts, drip bags and a ten-drip box, which makes the counter as much a shop as a bar.
