Stow Coffee Roasters started in 2015 and opened this café inside the City Museum of Ljubljana a year later, among the first specialty coffee rooms in Slovenia. The roastery in Kamnik sets the style: light roasting, coffee treated as seasonal produce, and lots bought directly from farmers or small cooperatives with close attention to origin, variety, processing and terroir. The list changes as harvests arrive. Recent seasons have carried Colombia Golden Huila, Brazil Daterra Boa Vista, Costa Rica Los Campos, Rwanda Gisanga and a Kenya AA from Baragwi, alongside blends such as Coffee Racer and the Big Buddy Blend, with rarer competition-level lots under the Stow Rare label. Manual brewing is central, with Chemex and V60 both in regular use.

A museum room on the garden level

The Ljubljana branch is shaped by its setting rather than by roastery hardware. It sits on the garden level, in the historic atrium of the museum complex, and the room is defined by glass, courtyard and greenery instead of a street-facing window. That changes the pace of a visit: this is a place people sit in, work in, and stay long enough to compare two coffees, not a queue to pass through. The interior is minimal against the older fabric of the building. The wider operation includes an academy and barista training, and the café is the public end of it, which is why the bar is comfortable talking through an extraction or a brewing method if asked.

Start with the flat white, then go filter

A flat white is the easy first milk order, and it is what most people arrive for. The stronger reason to stay is the filter side: ask for a single origin on V60 or Chemex and let the seasonal selection choose for you. With Colombia, Brazil, Rwanda, Costa Rica and Kenya all passing through, the list is origin-forward rather than built around one fixed house bean, and a Costa Rica served with hot water on the side to lengthen the cup is the kind of thing the bar will suggest. Cold brew appears in warm weather. Food is lighter and café-scaled, so take a pie or a pastry beside the cup, with smoothies, beer and Slovenian wines filling out the rest.
