This is the Amsterdam-Oost bakery and shop of Rum Baba Coffee Roasters, an independent, sustainability-minded roastery that puts its coffees in deliberately playful packaging, and the range here covers light roast, medium roast, the Liquid Diamonds line, decaf, matcha and tea, plus beans and gear for brewing at home.

The lots carry their own detail. Burundi Shikankoni runs to palm sugar, orange and marmalade; Burundi Nkuba is blackberry, jammy and winey; a Guatemala medium brings cane sugar, cacao and red apple; a Honduras Guayabina goes orange, toffee and milk chocolate; and the Yellow Blend sits on toffee, chocolate and berries. Cold brew is named too: Diamond Rush Nitro Cold Brew, blueberry, blackberry and lime, made from the Liquid Diamond La Reserva lot and poured smooth for warm city days.

A shop with a brew bar, not a room to settle into

East is a shop with limited seating rather than a café to sit out the afternoon in, and the visit follows that: fresh beans, home-barista gear, a coffee made at the bar, something from the bakery. Some people linger over a cup or a laptop, but the flow stays retail-led rather than table-service-led, and it is the largest of the roastery’s eastern rooms.

The neighbourhood identity matters. The shop sits near Oosterpark, and the smell of marble cake baking at the back is the thing that pulls people in from the street.

Start with Rum Baba’s own coffee rather than a generic café order. Diamond Rush is the clearest named cold option, with blueberry, blackberry and lime tied to the Liquid Diamonds side of the range, and the brew bar rotates the filter choice through whatever is current.

Pair it with marble cake, the bakery item most tied to this branch, chocolate and vanilla, made in the back and the reason the room smells the way it does. For beans, choose a fruit-forward Burundi, a chocolate-leaning Guatemala or Honduras, an East Africa bundle for berries, chocolate and caramel, or the Kaleidoscope coffees when the flavour references turn unusual. The best version of the visit is short and complete: a brewed Rum Baba coffee or the nitro, a slice of marble cake, then beans or gear for home.
