One roast profile, for filter and espresso alike

Prototype roasts light to medium, and roasts omni: a single omni-roast profile has to work as espresso and as filter rather than being tuned twice. That decision shapes everything at the bar: the coffees are chosen for character, sweetness and balanced acidity, bought through importers who pay producers properly, and kept traceable enough that the origin is a fact rather than a slogan.

The bar is built to test that work rather than move a queue. Manual brews run on Goat Story Gina brewers with Mahlkönig EK43 grinders, espresso comes off under-counter Modbar systems, and Nuova Simonelli Mythos II and Weber Workshops EG1 grinders sit alongside. The effect is closer to an active coffee lab than a fixed menu board, and the roster of roasted coffees turns over often enough to reward asking what is open.

A roastery café and tasting room, built small

The original Prototype is a roastery café and tasting room, a compact room of about 1,300 square feet with a relatively small seating area, which tells you what it is for: exploring coffee, not settling in for the afternoon. The space is bright and design-forward, with natural wood tones against white surfaces.

It grew slowly and deliberately. The name began in November 2016 as a placeholder for a holiday market booth selling 100g jars of coffee and bottled cold brew. The name stuck, and the business launched in March 2017 as a part-time project on a single Aillio Bullet R1 roaster before its founder went full-time later that year. The first permanent home was secured in August 2018, and the following it built there is what made a second Vancouver location possible.

Try the waffle donut

The food item most tied to Prototype is the waffle donut, and it exists because of a supply problem. The café had been buying baked goods from rotating local bakeries; when those became hard to secure, the founder built a self-sufficient food programme without a kitchen, developing the recipe at home until it fitted the way the bar already worked.

It is house donut batter poured into a waffle iron, then iced and finished with fresh fruit and other toppings, in versions that have included grapefruit and raspberry icing with grapefruit zest. As a pairing it makes sense: a compact in-house bake beside a manual brew, an espresso, or the cold brew whose lineage reaches back to those first bottles at the 2016 market. The waffle donut is the clearest example of how this place works, where roasting, service and food are all arrived at by iteration.
