This is Pallet's Vancouver roastery, cafe and head office in one warehouse-sized room, opened in 2019 as a serious buildout rather than another storefront, and the roasting is visible while you wait. The drink list stays plain on purpose: latte, espresso, dark coffee and cold brew. Order by format rather than theatre. Milk drinks read best as a latte, espresso is the short answer, and cold brew covers the days when a hot cup feels wrong. Beans, brew guides, subscriptions and wholesale run out of the same address, so the counter is only one part of what happens here.

The space is half the appeal. Pallet took a heritage shell, the historic Settlement Building, and put a modern coffee operation inside it, so the room has industrial scale and adaptive-reuse character instead of small-storefront intimacy. Counter service keeps the rhythm simple: arrive, pick a drink, look at the bakes, then settle in or keep moving. It works for a quick espresso, a pastry stop, a work break or a slower sit, and the production side stays in view the whole time rather than being hidden behind a wall.

Latte first, gateau basque beside it

Start with the latte for the everyday read on the roast, or espresso if you want it undiluted. Then take the gateau basque, the richest thing in the case and the one that stands up to either drink. Croissants, muffins, biscuits, other pastries and sandwiches fill out the rest, which makes the branch a breakfast-adjacent coffee stop as much as a roastery visit. If the coffee is working for you, take a bag of beans on the way out, since the whole point of standing in the roastery is that the same coffee goes home with you.
