Laminated dough in Dogpatch
Neighbor Bakehouse works in laminated dough, and the lamination is the point. Greg Mindel, a James Beard Award nominated baker, opened the Dogpatch bakery in 2015 after building the business through wholesale and catering out of shared kitchens, supplying restaurants and hotels before there was a counter of his own. The bakery grew out of years spent supplying other people’s dining rooms, which is part of why the range reads the way it does: viennoiserie and breads first, with the sandwiches, small pastries and cakes arriving later. The house style favours slow fermentation, which gives the pastry a tangy depth rather than a purely buttery finish, and the range now runs from viennoiserie and sourdough breads through sandwiches, cakes and inventive savoury bakes.
The line, the racks and the outdoor tables
The rhythm is a morning bakery rhythm: counter service, quick ordering, bakers visible behind the racks, and a queue that forms for whatever came out most recently. It moves fast, but the popular pastries sell out, so decisiveness is rewarded. Outdoor tables give people somewhere to sit with a pastry and a coffee, and the seating is dog friendly. Coffee runs to espresso, cappuccino, americano and café au lait, with almond and soy milk available. The crowd mixes locals, families, couples and people making a weekend pastry stop, which is about as good a description of the Dogpatch on a Saturday as the bakery itself.
Start with the Everything Croissant
The Everything Croissant is the clearest place to begin, a savoury laminated pastry built with onion and cream cheese, and the item most closely tied to the bakery’s reputation. The Pistachio Blackberry Twice-Baked Croissant gives the sweet side equal weight, alongside a raspberry pistachio twice-baked croissant, an almond croissant with frangipane, and banana bostock with caramelised banana. The Ginger Pull-Apart is the other name to know. Savoury is not an afterthought here, and the Sauerkraut Smoked Cheddar Peppadew Tart makes that plain. Breads bring a tangy sourdough with a crusty, dense crumb, and the Oat Coconut Pecan Chocolate Cookie sits among the non-croissant sweets. The Infatuation listed Neighbor Bakehouse in its 2026 Bakery Guide, and Opinionated About Dining ranked it #49 on its Cheap Eats in North America list in 2023 and #61 in 2026.
