Flour is the starting point at Native Grain. The Truro bakery works with Cornish and British-grown wheat and UK stoneground flour, uses no artificial additives, and builds nearly everything from a sourdough base: wholegrain tin loaves, ciabatta, focaccia and sourdough baguettes. It opened in November 2023 as an independent, bread-led shop baking from scratch on the premises rather than finishing par-baked goods brought in from elsewhere, and it has since been named in The Good Food Guide's Britain's Best Bakeries. The sourdough baguette shows the sourcing most clearly. It is naturally leavened and made with strong white flour from wheat grown in the Cotswolds and wholemeal spelt from Dorset.

The shop is small and built for turnover, a little in-and-out bakery painted navy blue, its windows clouding with condensation on cold mornings while the early queue forms outside. Production is not hidden away. Loaves are shaped and scored at the back while the counter is trading, so the room takes its atmosphere from the racks, the glass cabinet and the work itself rather than from any service ritual. The bread racks carry the wholegrain tin loaves, ciabatta and baguettes, while the glass cabinet holds the laminated and sweet work, and between them they account for almost everything the bakery makes. Regulars come for bread first and the cabinet does the rest. It is the kind of bakery where most of the morning crowd knows what it wants before the door opens, and where the choice narrows as the day goes on.
