Filter and espresso roasts, split down the middle
Morgon roasts on two tracks, filter and espresso, and sells the results as whole beans, so a visit is really a decision about which lot to take home. The Gothenburg roastery has worked this way since the summer of 2018, and the range has run through single origins including Ethiopia Kochere, Kenya Kirinyaga, Colombia San Agustín, Brazil Chapada de Minas, Costa Rica Tarrazú and Peru Lonya Grande.
The tasting notes tell you how the roasting is pitched. Dark chocolate and caramel at one end; blueberry, gooseberry, rhubarb, jasmine and peach at the other. Nothing is roasted dark enough to hide where it came from. Seasonality is explicit, with the range changing as harvests do and a coffee of the month for anyone who would rather be told what to drink than choose from the whole range each time.
The bag is part of the product
Morgon takes design as seriously as extraction. The visual language came out of the roastery's location in Gothenburg's old shipyard, where the harbour is still visible in the signage, the freight containers and the cranes, and the result looks nothing like the pale minimalism most Scandinavian roasters settle for.
That carries onto the shelf. Each 250g bag states who roasted it, with the origin and the taste notes printed where you can read them before buying, so the encounter with a coffee starts before any water touches it. The team is open about the argument behind this: presentation changes how a cup is valued. It is a claim most roasters would not make out loud, and the shelf backs it up.
