The bench after HotChocolate

Yeast, sugar, flour, and coffee set the first terms for Mindy Segal, baker and owner at Mindy’s Bakery in Wicker Park, Chicago, before the counter begins to fill. Her work here follows a long pastry line in the city: Kendall College for the technical base, then Chicago kitchens where precision was not optional, among them Charlie Trotter's, Ambria, Marché, and MK. In 2005, she became owner and pastry chef at Mindy’s HotChocolate in Bucktown, a room that made dessert feel less like an ending than a complete station of its own. Since 2022, she has carried that discipline into this bakery, where the premise is direct and bench-side: baked goods served at their best, close to the oven, with ingredient quality and exact technique doing the quiet work. Segal’s 2012 James Beard Foundation Outstanding Pastry Chef award belongs to that longer career, not to a borrowed mythology. At Mindy’s Bakery, the authority comes from the daily repetition of dough, filling, crumb, glaze, and cup.

Bagels, bialys, pastry, hot chocolate

The program rests on artisanal bagels, bialys, pastries, and hot chocolate, with a cultural range the bakery names plainly: Eastern European, French, Italian, and Middle Eastern. That list matters because it keeps the work from collapsing into a single pastry-school dialect. A bialy asks for a different memory than a croissant; hot chocolate asks for another kind of patience. The bakery’s own language points to techniques carried by bakers, grandmothers, and friends before them, handled with respect rather than costume. Specific formulas, fermentation times, flour sources, and lamination routines are not published by the house, and the omission is better left intact. What can be said is that Segal’s career has always treated comfort as a disciplined form. Here, a bagel or pastry has to survive the counter without losing the hand that made it. The same standard holds in the cup, where hot chocolate is not an accessory to the case but part of the craft program.

A small room built around the counter

The room reads as a neighborhood bakery before it reads as a destination. The mood is rustic, warm, and conversational, closer to a working counter than a polished dining room. There is no need to over-describe it: the place is small, the pull is specific, and the sensory register is the bakery’s own, yeast, sugar, flour, and coffee moving through the morning. References sit in the case as method rather than decoration. The comfort here is not soft focus. It is the comfort of things made to be eaten while they still carry heat, structure, or gloss from the bench. In that kind of room, timing becomes part of the experience, because the best version of the work is often the one closest to the bake.

The cup that travelled

In 2026, Mindy’s Bakery won Good Morning America’s United States of Hot Cocoa contest and received the $10,000 grand prize. The award is useful because it names something the bakery already treated seriously: the cup beside the pastry case. Segal and her mother appeared with ABC7 to mark the win, a small public moment for a bakery whose deeper language remains flour, filling, and heat. Mindy’s Bakery hot chocolate brought the counter into a national frame.
