An Aarhus roastery that stayed a coffee bar
Esben Piper opened the first cafe away from the city centre, and by 2013 there was a roaster in the basement, which turned a place that served coffee into a company with a point of view about it. La Cabra now supplies wholesale partners and home subscribers in more than sixty countries and runs cafes in Copenhagen and New York, but the Aarhus room still holds the original proposition, a bar where the roasting decisions show up directly in the cup. Opinionated About Dining placed it at #30 among cheap eats in Europe in 2025.
How the coffee is roasted
The house approach is omni-roasting. Each coffee gets a single light profile developed at the cupping table and used across brew methods, rather than a darker roast for espresso and a lighter one for filter. Staff will talk through body, acidity and fruit character, and the list rotates as lots come and go through the year. Brew choices run to espresso, cortado, flat white, V60, iced latte, oat milk drinks and espresso tonic. Behind all of it sits the sourcing, built on producer relationships and origin visits, which is how a small Danish roaster keeps a changing list of single origins instead of one fixed blend.

Start with the cardamom swirl bun, the snurre that carries the bakery side as clearly as a V60 carries the roastery. Then pick the coffee by method rather than by house style: a V60 for the clarity light roasting is aiming at, an espresso or an espresso with milk to see how the same profile behaves short.
