The brew bar at Johan & Nyström is round, which changes how the whole room works. You stand at it and watch the slow-brew apparatus being worked instead of waiting for a cup to appear from behind a machine, and the conversation that comes with that is the point of the place. This was the first concept store the roaster opened in Stockholm, and it still reads as the fullest expression of what the company thinks a coffee bar is for.

Behind the counter the programme is calibrated rather than fixed. When new coffees land, the team tastes them, sets recipes and adjusts methods and machines around them, so what is on the bar in any given week reflects what has just arrived. Espresso runs on Victoria Arduino Black Eagle machines, hand brewing covers the filter side, and tea is treated properly rather than as an afterthought.

The building is more ambitious than the counter-service format suggests. There are nooks and multiple levels, an upstairs balcony looking down on the bar, and a training and education lab downstairs where the teaching side of the business happens. Bright colours carry through, and a wall of Aeropress and other competition trophies makes the room’s priorities plain.

Seating is varied enough to suit whatever brought you in: pairs and small groups, a bench at the back of the bar, and big sunny window seats for anyone settling in with a laptop or a book. Service is consultative rather than transactional, and staff will talk through the single origins at whatever length you have patience for.
