Holaste! roasts what it serves. Green coffee comes in from several origins and is roasted in Puerto Natales, with each profile worked in house, so the café and the roastery are one operation rather than a bar pouring somebody else's beans. That is unusual this far south, because the Magallanes region sits about as far from a coffee supply chain as a roaster can get. The programme is defined more by that practice than by a long drinks list: filter methods are part of the offer, the same coffee is sold to take away, and every cup has been roasted and brewed in the same town. The World's 100 Best Coffee Shops placed it at number 21 in 2026.

From a handmade cart to the corner of the plaza

The project started in 2017 as a cart built out of reused materials, put together to get good coffee into one of the southernmost towns in the world and to gather people around it. Holaste! calls itself más que una cafetería, un proyecto con corazón Magallánico, born al fin del mundo, and the cart is still why the place reads as civic rather than commercial. It now sits facing the Puerto Natales plaza, where roasting, cooking and service all happen under one roof, which makes it a micro-roastery as much as a café.

House rules, and what to eat with the coffee

The room is specific about how it wants to be used. It is kept free of smoke and vaporisers, and also of computers and tablets, so this is not a place to set up and work. The rhythm is conversation, coffee, a plate and a pause. Dogs are welcome if they are leashed and their owners carry bags. The kitchen is framed as café de especialidad y comida hecha con cariño, with plates built from fresh local ingredients and cooked on site now that the team cooks as well as roasts and serves. The food is not organised around named pastries or brunch dishes, so read the counter on the day and let the coffee lead.
