A flagship built around the supply chain

Exploradores de Café works as the Santa Fe flagship of a Mexican specialty coffee project that starts at the farm. The room holds a roastery, a tasting table, a professional equipment showroom and a bar, and coffee plants grow in it, which tells you what the place is for before anyone orders. The name comes from exploring Mexican mountains in search of exceptional coffees, and the sourcing began in Guerrero before widening into the State of Mexico, Chiapas, Veracruz and Oaxaca, with Ethiopian and Colombian lots alongside them. Café Gran Turismo from Motozintla in Chiapas is the named house cup, and it leans classic, with caramel running through it.

A patient counter, not a quick one

The rhythm is unhurried and openly educational. Guests move from the roaster to the cupping setup, past the equipment shelves and toward the bar, and the staff expect to talk through what is in the cup rather than simply hand it over. Producers are part of that: many farmers bring their own harvests here, work on the roast and tell guests about the coffee themselves. Public cuppings run at weekends without charge, and a guided session lets guests brew the coffee themselves while working through aroma and flavour with no experience needed. In 2026 the café was listed 87th in The World’s 100 Best Coffee Shops. Santa Fe is not the obvious neighbourhood for a destination counter, which makes the visit feel deliberate rather than incidental.

The grand latte is the clearest named signature and the easiest way to read the house style in a milk drink before going further.
