A roasting lab in an Al Quoz warehouse

Coffee is roasted, cupped and poured in the same warehouse here, which is the whole argument for making the trip out to Al Quoz Industrial Area 3. Cypher opened in Dubai in 2016 and works as roastery, coffee house and academy at once, founded by someone who came out of finance and qualified as a Q Grader. The equipment is on show rather than hidden away: Probat roasters with a custom in-house cooling system, and a cupping lab running Marco water systems and Mahlkonig EK43 grinders. The company also trades green coffee, handling more than 30 tons a year, so the counter is the retail end of a much larger operation.

Origins, processing, and an education programme

The coffee list is where the work shows. Named lots run through Kamunyaka and Thageini Supernatural from Kenya, Eclipse from Tanzania, San Ignacio from Peru, Attarah from Yemen processed anaerobically, Maridadi from Ethiopia given fourteen days of anaerobic fermentation, and Las Delicias from Nicaragua as a cold anaerobic natural. Certified lots sit across the range, including Rainforest Alliance, UTZ and USDA Organic. Beyond the cup there is cold brew, drip boxes, cascara, capsules, brewing gear and subscriptions, and the shop is organised by experience level through Headstart, Coffisticated and Nobility, which is a more useful map than a menu board. The education side runs SCA and CQI certified training, so the classroom is part of the building rather than a side project.

What to drink and what to take away

Order an origin as filter first, because that is what the roasting is for. The Kenyans are the safest introduction and the Yemeni and Ethiopian lots are the experimental end. Espresso is competently handled, but it is not the reason the room exists. Ask what is on the cupping table if the visit is unhurried, since the lab works most days and the staff are used to explaining what they are tasting. Take a bag home chosen by processing rather than by country, because the anaerobic and cold natural lots read very differently from the washed ones. Cypher sits in The World’s 100 Best Coffee Shops, ranked 90th in 2026, and took the seventh-ranked coffee at the 2021 Best of Yemen auction, which is a fair summary of where its attention goes.
