Why go
A pastry case built on laminated dough
The kouign-amann sets the tone: croissant dough turned and baked until the sugar caramelises, finished with a light glaze. Around it the case runs through almond croissants, chocolate croissants, plain croissants, morning buns, almond-flour macaroons, muffins, apple coffee cake and the caramelised upside-down croissant that regulars watch for. Warm breads and custom cakes come from the same kitchen, and seasonal savoury dishes fill out the rest of the day.
Common Bond opened in Montrose in May 2014 as Common Bond Bistro & Bakery, pairing a rustic-chic room with a bakery counter built on French-inspired pastry. The name comes from the idea that good food creates a common bond across ages, cultures and beliefs, and that first Montrose shop became the starting point for a wider Houston group. Its pastry work was recognised with a James Beard Award for Outstanding Pastry Chef or Baker in 2025.
Counter first, room second
The format is counter-style and casual. Lines form for pastries and bread, food moves quickly even when the room is full, and the rustic-chic space works about equally well for eating in or carrying out. Natural light and full display cases do most of the decorating.
The bakery also works well beyond the cafe table, with custom and wedding cakes made to order for occasions that have nothing to do with a morning pastry run.
Bread runs underneath all of it. Warm loaves come out of the same kitchen as the viennoiserie, and the savoury dishes change with the season, which is what lets the room work as a lunch stop rather than only a morning one. The 2025 Opinionated About Dining list of cheap eats in North America placed the bakery at #620, a fair reflection of how it is actually used: often, casually and without ceremony.
Order the kouign-amann, then choose a side
Start with the kouign-amann whenever it is in the case. It shows what the kitchen is best at: lamination, caramelisation and a glossy finish that holds up.
From there, pick a direction. Sweet runs to the almond or chocolate croissant, the morning bun, macaroons, muffins, apple coffee cake or the caramelised upside-down croissant. Savoury moves to the seasonal dishes. Drinks stay in support, with coffee, juices and lemonade, chai latte, English breakfast, chamomile and a hibiscus tea with a floral snap to it, plus beer and wine for anyone treating the visit as lunch rather than breakfast.
Frequently asked questions
What should I order at Common Bond Cafe & Bakery?
Start with the kouign-amann, which shows the bakery’s lamination and caramelisation at their best. From there choose a direction: an almond or chocolate croissant, a morning bun, apple coffee cake or the caramelised upside-down croissant on the sweet side, or one of the seasonal savoury dishes if you are treating the visit as a meal.
Does Common Bond make cakes to order?
Yes. Alongside the daily pastry case, the bakery makes custom and wedding cakes, which is a large part of what it does beyond the cafe table. The same kitchen handles breads, croissants and seasonal savoury dishes, so the cake work sits on the same French-inspired foundation as everything in the case.
