Why go
Water is the first variable at this San Jose coffee bar: mineral-tuned, treated as the ingredient that makes up almost all of what ends up in the cup, and dialled in beside the roast rather than after it.
Single-origin roasting and mineral-tuned water
The shop roasts its own single-origin beans on a Bellwether, an electric, zero-emissions commercial roaster, and pairs that with harmonised mineral-infused water and a technical approach to brewing. The house line is blunt about the priority: start with perfect water, then keep adjusting the craft. In practice that means bean origin, roast profile, dose weight, grind size and extraction method are all things to be set rather than assumed, and the team travels for the coffees and teas it wants to pour. It opened in 2021, run by a husband-and-wife team, and behaves like a beverage lab as much as a café.
From batch brew to lychee tea
The named coffee drinks run through batch brew, americano, espresso, cortado, cappuccino, nitro cold brew and latte. The flavoured lattes are the house signature set: honey lavender, honey sea salt, maple cinnamon and bourbon banana, plus an espresso served over ice with a premium bitter orange tonic. Lattes can be built on light, medium or dark roast, which is unusual enough to be worth using, and decaf, seasonal drinks, a medium Honduras organic and a Brazilian dark single origin have all come through the bar. Tea is not an afterthought either: the lychee mojito tea brings lime, mint and blended lychee together with the leaf.
Order the honey sea salt latte first
Start with the honey sea salt latte. It shows the flavoured side of the bar while keeping the espresso in view, and it is the fastest way to work out whether the house style suits you. Honey lavender is the other signature; maple cinnamon and bourbon banana lean sweeter and more seasonal. For something brighter, take the bitter orange tonic with espresso over ice, and for a drink without coffee the lychee mojito tea is the most specific thing on the list. The room is modern and relaxed, with outdoor seating, plenty of outlets and enough space to work, and its position inside Mitsuwa Market Place gives it a drop-in, everyday feel. Roast level, milk and sweetness are all set to order, so the useful habit is to say what you want rather than take the default.

Frequently asked questions
What should I order at Coffee & Water Lab?
The honey sea salt latte, the drink that shows the flavoured side of the bar while keeping the espresso in view. Honey lavender is the other signature, and maple cinnamon and bourbon banana lean sweeter. For something brighter, take the espresso over ice with bitter orange tonic, and for tea, the lychee mojito.
Why is the water such a big deal here?
Water makes up almost all of a cup of coffee or tea, so the bar treats it as an ingredient and serves it mineral-tuned rather than straight from the tap. That runs alongside single-origin roasting on a Bellwether and the habit of setting dose weight, grind size and extraction method for each drink.
