Whole cakes are as central to the brand as slices, which is why the Cumberland Street room in Toronto works for a planned pickup as much as for a slice eaten on the spot.

The house identity is cheesecake and cake, not bread, viennoiserie or a laminated pastry counter. That focus goes back to 1972, when the Carole’s Cheesecake Company started making cheesecakes and cakes, and the business now counts 54 years of it. The wider range takes in halal, kosher and gluten-free versions alongside the standard line.

A dessert cafe rather than a bakery window

This is a dessert-led cafe, and the Indulge Bar & Cafe name it also trades under makes the point: drinks and something to eat sit beside the sweets rather than trailing behind them. Its own shorthand is desserts, drinks, eats, in that order.

That shapes the visit. It works for a small group or a date as much as for a solo slice, with seating indoors and out, and cheesecake is the thing it does properly rather than one item among many. The room is casual and made for lingering over a slice and a coffee rather than moving through at speed, which is unusual for a counter built on a single product.

Then decide the scale. For a table visit, a slice with something to drink is the format the room is designed for. For sharing elsewhere, the whole cakes are the signature category and the reason a lot of people come in at all. For something smaller and branded, the Cheesecake STIKS give the same programme a portioned form at 60 grams. The rest of the case runs to cakes beyond cheesecake, so a mixed order is possible, but cheesecake is what the place has spent its history getting right.
