The drink people ask for first is the matcha pistachio latte, and Canyon serves it on tap rather than building each one to order, which is a small tell about how the bar is run. The coffee behind it is the company's own: Canyon roasts organic and Regenerative Organic Certified lots and sells them under names its regulars know, Beachwood, Notes From, Sagebrush, The Alentejo and an Afternoon Decaf. A corner room that looks like a ceramics studio

The Echo Park café reads as sun-filled and design-minded, a corner room with warm light, wooden furniture and a vintage record player playing soft rock. It draws a creative crowd and has a visual culture of its own rather than the feel of a generic pickup counter. Canyon began in 2016 in its founders' Los Angeles apartment and now describes itself as rooted in two neighbourhoods, Echo Park here and Prospect Heights in Brooklyn, so this room is not a branch of something else. It is half of what the company actually is, which is why the café and the roastery read as one idea rather than two.

What to take home

The retail side is as much of the business as the bar. Whole beans, subscriptions and gifts run alongside the café, and the instant coffee is treated as a real product rather than a novelty, roasted, batch brewed, freeze-dried and sold in boxes of six packets. If the visit is about coffee rather than matcha, order an espresso or a filter and let the roast profile speak, then choose beans by the name that fits the way you brew at home: Sagebrush and Beachwood for everyday drinking, The Alentejo or Notes From when the interest is in a particular lot. Afternoon Decaf exists for the hour when a second cup would otherwise be a bad idea.
