Why go
The bread is small-batch and organic, mixed inside a 19th-century stone barn converted for the job. White Horse Bakery stands on its own across the courtyard from the White Horse pub in Holme-next-the-Sea, not as a counter within it, and since opening in April 2024 it has pulled queues along the north Norfolk coast for sourdough, viennoiserie and proper coffee.
Heritage wheat and a small team
The head baker calls himself a lifelong baker and puts the emphasis on small batches, time and top ingredients. The team is small, three people running a local operation, and the philosophy is stated plainly: handmade organic sourdough, provenance, sustainability and doing things properly.
The bread-making language is precise. Production is handcrafted, without mass machinery, with careful proofing and age-old technique instead of rapid oxidisation shortcuts. Flavour and resilience are linked to low-input heritage wheats, including long straw “Population” wheat and cross composite populations whose genetic diversity is intended to reduce reliance on pesticides and chemical fertiliser.
A bakery with a room attached
The visit is bakery-led with some eat-in hospitality rather than a restaurant. Inside there are beams, stone walls and a wood-burner for the winter, with a pretty, partially covered terrace outside. The bakery works as both production space and community destination, sitting beside the pub as the second hub in the village, and it is dog-friendly.
Demand shapes the experience as much as the design. There were huge queues on opening day, and customers were still queueing out of the door at the first anniversary. Expect counter-style service built around bread, pastry, sandwiches and coffee, with local and seasonal sourcing behind the wider food operation.
Start with the sourdough, then the savoury pastry
Sourdough is where the method is clearest. The named loaves are the sourdough itself, a rye and a baguette, all framed by low-input heritage wheat, careful proofing and small-batch production.
The viennoiserie signatures are pain au chocolat, almond croissants, Danish pastries and classic croissants, and the case turns savoury with croissants filled with smoked salmon and cream cheese. More substantial bakery food includes home-baked focaccia with roast pork and apple sauce, a Walsingham Cheddar and ham toastie, and breakfast built around Clarence Court poached eggs with local thick-cut ham on sourdough. Coffee is core to the offer, billed as proper coffee and treated as part of the craft rather than a side line. The bakery holds a place in The Good Food Guide’s Top 50 Bakeries and took Best Newcomer at the Norfolk and Suffolk Magazine Food and Drink Awards 2025.

Frequently asked questions
What should you order at White Horse Bakery?
Sourdough first, since the heritage wheat and careful proofing show up most clearly in the loaf, with rye and baguette alongside it. For pastry, the signatures are pain au chocolat, almond croissants and Danish pastries, and the croissant filled with smoked salmon and cream cheese takes the case savoury.
What flour does the bakery use?
Low-input heritage wheats, including long straw “Population” wheat and cross composite populations chosen for genetic diversity, which is intended to cut reliance on pesticides and chemical fertiliser. The dough is organic and worked in small batches, handmade rather than run through mass machinery, with careful proofing rather than shortcuts.
