Walter Musco opened the shop in 2009 as Pasticceria Bompiani and put his own name over the door in 2021, and the rebrand was not only cosmetic. The house symbol moved from a spiral to sharp triangular forms, described by the shop as solid, geometric, finite and perfect. That reads as biography as much as branding. Musco came to pastry from the art world, trained through a professional cooking course and a run of restaurant internships, and the shop still speaks both languages at once. Valrhona is the chocolate house of reference, appearing in fifteen types from dark to white, and the maritozzo with whipped cream is the counter piece most people arrive for.

Breakfast pastry, a coffee bar and a lunch that is not an afterthought

Breakfast is treated as its own craft line rather than a warm-up act: fourteen kinds of breakfast pastry built on three separate doughs, an Italian cornetto, a French croissant and a leavened dough for fried pieces. The counter carries the classics that follow from that, including a mini bigne di San Giuseppe and a pain au chocolat. The coffee side is a proper programme, using blends from the Mondi roasting company alongside single origins and teas, so a stop here can be a sitting rather than a grab. At midday the kitchen extends into soups and salads, which is why the room does not behave like a takeaway pastry case. Ice cream sits in the same range, with chocolate running through all of it as the connecting material.

Achrome is the one to understand: after an encounter with Massimo Bottura, Musco moved away from multi-flavoured cakes toward desserts that express a single idea in both look and taste, and that cake shifted from coconut, passion fruit and mango to a unified almond reading. Chocolate belongs in any order, whether as pralines, mignon pastries or the sculptural Easter eggs. Those eggs became a signature when the shop refused to sell packaged eggs with toys inside and made confectionery pieces on annual themes instead, from Lucio Fontana, Alberto Burri and Piero Manzoni to Rome itself in 2024.
