Vertigo roasts its own coffee in San Juan Bautista, and the names on the board are the quickest way into the program: Monk's Momentum Espresso is the anchor, with Mission Blend and Baroque alongside it. Naming blends that specifically is a roaster's habit rather than a café's, and it tells you where the attention goes. The other two widen the range without diluting it, and between the three there is enough variation to make a second visit taste different from the first.

Order the espresso straight and you get the clearest version of what the roasting is after. It is the reason the place reads as a roastery with a café attached rather than a café that happens to buy good beans, and it is the order to lead with on a first visit.

A patio, a counter, and a small-town pace
