Steady State Roasting works out of a 250 square foot shared space in downtown Carlsbad, alongside artists and makers, which makes it closer to a roasting bench with a counter attached than a room built for lingering. The company started in 2015 with a stated refusal to settle for mediocrity in Southern California coffee, and roasting has stayed the centre of it since.

The roasting brief is simple: present coffees as nature intended, and use the roast to show varietal, processing and terroir rather than to stamp a house flavour over them. Sourcing runs through long relationships with partner farmers and importers, which is why the same origins reappear season after season.

Daily coffees and rotating limited lots

The list splits in two. Daily Essentials are the steady coffees, chosen to express classic regional character: Peru Huabal Organic, Ethiopia Gore Kone, Colombia Clásico, Costa Rica Aquiares, Colombia Inzá Decaf, and blends including Way Out Blend Organic, Daybreak Blend and Space Traveler. The second tier is smaller and stranger, a rotating set of small-lot coffees picked for unusual, noteworthy profiles.

Rwanda Karongi Gitesi Bourbon shows how far that detail goes. It reads strawberry, mango and fig jam, juicy through the finish, and comes from smallholder farmers in the Karongi region growing Bourbon between 1700 and 2000 metres. The Gitesi mill was established in 2005, runs a Penagos 1500 pulper, and turns out washed, natural and anaerobic coffees. Colombia La Cristalina Bourbon sits in the same rotating tier.

Treat it as a bean shop with a counter

A visit works best as a tasting stop and a bag pickup rather than a long café sit. The space is compact, the counter is effectively the whole room, and much of what happens there is people following the current releases. Alongside the coffee there are brew supplies and gear, monthly special releases, and subscriptions if you want the rotation to keep arriving.
