Why go
Roasting in the room
A Probat roaster runs inside the Los Angeles Sightglass Coffee cafe, which is what separates this Sightglass from the company’s non-roasting neighborhood shops in San Francisco. The espresso bar is open to the room and centers on the house blend, with cappuccino and flat white the most direct way to read its balance of sweetness and acidity.
For a slower cup, the dedicated slow bar brews single-origin pour-overs one at a time, each taking about eight minutes. The green coffee comes from Ethiopia, Colombia, Brazil and Indonesia, and the Los Angeles program follows the same production-forward approach as the rest of the company. There is no long flavored menu here. There is espresso, carefully brewed filter, and roasting and brewing treated as one continuous craft.
A marketplace as much as a cafe
The Hollywood venue opened in 2019 as the first roastery and cafe the company built outside San Francisco, where the brothers Jerad and Justin Morrison started it in 2009. A 2020 rebrand to Sightglass Marketplace and Roastery reflected what it had become: coffee still at the center, with provisions, pastries and an all-day restaurant turning the space into a daily-use hub for the Sycamore District’s studios, offices and remote workers.
The food side is more substantial than a pastry case. A bakery program supplies the counter and a kitchen runs through the day, and vegan options are part of it, so the marketplace stays useful for plant-based visits as well as coffee ones. Provisions sit alongside the pastries, which is what turns a coffee stop into a reason to come back at other hours.
Start with espresso, then give the pour-over time
On a first visit, order espresso, a cappuccino or a flat white at the open bar. Those are the most compact statements of the house blend and the quickest way to place the roast.
Then give the slow bar the eight minutes a single-origin pour-over takes. The building is arranged around watching that happen: the bar is unobstructed, the roaster is visible, and seating is split between quick-service zones, a community table and an elevated mezzanine that looks back over the roasting floor. The layout carries different rhythms, from a short espresso stop to a long working session. The strongest order is a two-step one, blend first for the house profile, then a single origin for clarity.

Frequently asked questions
What should I order at Sightglass Coffee?
Start with espresso, a cappuccino or a flat white at the open bar, which show the house blend in its most compact form. Then order a single-origin pour-over at the slow bar and allow about eight minutes for it. Together they give you the blend and the origin side of the same roasting operation.
Does the Los Angeles cafe roast its own coffee?
Yes. A Probat roaster runs on site, which sets this location apart from the company’s non-roasting neighborhood shops in San Francisco. Green coffee comes from Ethiopia, Colombia, Brazil and Indonesia. An elevated mezzanine looks back over the roasting floor, so the cup and the production behind it stay connected.
