Order the seasonal espresso blend for the house direction, or a single origin when the producer and the tasting notes are the point. Flat white, long black, cappuccino and latte sit alongside, and the bar adjusts grind, water temperature and brew time coffee by coffee. A warehouse room that still behaves like a roastery

The Carlton cafe occupies a converted warehouse and still carries the fit-out from its years as a working roastery with a cafe attached: navy facade, exposed brick, high ceilings, concrete floors, metal fixtures, open counters and visible brewing stations under good natural light. Roasting and the head office moved out to Fairfield in 2017, but the room never softened into a dining room. Seating is mostly indoors, split between communal tables and single seats, and the place is genuinely workable, with wifi and space for a laptop, which is why students from the nearby university, freelancers and local workers fill it through the day. Service is straightforward counter style: order at the front, take a number, sit down.
