Flat whites first, matcha alongside

The flat white is the order that made Seamer’s name: milk stretched to a proper texture over a carefully pulled espresso, and counted among the best in the city within a year of the café opening. Because that drink depends on extraction and milk in equal measure, the praise points to a bar that treats its milk-based espresso as the main event rather than an afterthought. Matcha lattes hold the other half of the board, and plant-based milks are on hand for either.

A 9th arrondissement counter that opened in 2024

Seamer opened in March 2024 in Notre-Dame-de-Lorette, a quieter residential and artistic pocket of the 9th where independent cafés and boutiques set the pace. That makes it a recent arrival to the Paris specialty coffee scene, and it behaves like a daily local stop rather than a destination: room to sit, talk and work through a morning instead of a counter built only for takeaway.

Add the vegan mochi

The bake to add is the vegan mochi, the item that separates Seamer from a conventional Paris coffee counter. Mochi, a Japanese pounded rice cake, nods to the owners’ Asian background and gives the pastry side a reference point outside croissants and tartines. With plant-based milk in the cup and mochi on the plate the whole order can be dairy free, which is still unusual on a street where butter and cream are the default.
