The programme is a single decision repeated: one carefully chosen single-origin coffee each month, roasted by Persimmon itself and served as espresso or batch brew. That is the opposite of a long list of origins and processing methods, and it means the current coffee gets full attention, whether it is a Tanzania Amai or whatever has replaced it on the shelf. The attention stays on the current coffee rather than on a menu of choices, and the counter is happy to say what it is doing and why. Tea comes from Hibiki-an and Rishi. Food is deliberately narrow, laminated pastries baked by Bloomsday Cafe, so the natural order is a coffee or a tea and something flaky beside it.
Three hundred and fifty square feet, five seats
The Fishtown café opened in summer 2022 after a run of collaborative pop-ups, and it is intentionally small: a bright 350-square-foot room with bench seating for five. The design took its cues from coffee shops and stands in Seoul and Tokyo, particularly the way natural light does the work in a compact space, and the result is quiet and stripped back, with every object chosen rather than accumulated. The custom ceramics are handle-free, made by Domenic Frunzi Ceramics and echoing traditional handleless tea cups, so touch becomes part of drinking rather than an afterthought. It is a room that rewards a short visit and does not pretend to want a long one. Persimmon calls itself a specialty coffee roaster and shop, and the café is the smaller, later half of that.
Made by people down the street
The materials come from the neighbourhood as much as the coffee does. Solid white oak bench seating, shelving, and the bar were built with Leeward Furniture in Philadelphia; the potted greenery came from local plant shop Stump. The bar setup is just as specific: a La Marzocco Linea Mini with a Mahlkönig K30 grinder for espresso, and a Mahlkönig Guatemala grinder feeding a Curtis G4 ThermoPro for batch brew. None of that is decoration. This is a small roaster-café where equipment, ceramics, woodwork, and a single monthly coffee are arranged around one composed visit, and the right expectation is a cup and a pastry rather than a café meal.
