Maison Bouillet has been a Lyon name since 1977, and the Tassin counter is how the western suburbs get it: macaron pyramids, coffrets, chocolates and a case of individual pâtisseries from a family house.

Maison Bouillet began in the Croix-Rousse in 1977, opened by Henri Bouillet and his wife Ginette, who ran the daily life of the shop. Their son Sébastien Bouillet, born in Lyon in 1976 and raised inside the trade, leads it now. Tassin is one branch of that family network rather than an unrelated local shop with a similar name, sitting alongside the Croix-Rousse flagship, the corner at the Halles Paul Bocuse and other addresses in Lyon and Miribel.

What the house says about itself is short: quality and tradition, and a temple de la gourmandise. In practice that means a boutique whose range is entirely sweet, presented for gifting as much as for eating on the day.

A counter, not a café

The rhythm here is retail. There is no dining room and no coffee service; a visit means choosing from the case, collecting an order, and leaving with a box. That makes Tassin an easy stop for a composed dessert, a chocolate assortment or a macaron arrangement for a birthday table.

The range is broad within its lane: pâtisseries, glaces, chocolats, confiseries, cakes and sablés, macarons, gift boxes, coffrets and macaron pyramids. The maison also runs pastry classes, which says something about how it sees itself, as a house that teaches technique as well as selling the results of it.

What to take home

Macarons are the first thing to look at, both as single pieces and in the coffrets and pyramids the house builds for celebrations. Chocolates and confiseries are the next lane, and the glaces are worth remembering in summer, when the counter shifts toward ice cream and sorbet.

For an ordinary afternoon, an individual pâtisserie or a few sablés is the simplest order; for an occasion, the presentation is part of the product rather than a wrapper for it. The Croix-Rousse original has been a Lyon rendezvous for gourmands since 1977, and the Tassin branch is the version of that house closest to the western suburbs, which is the reason to use it rather than driving into the city.
