Why go

Everything at Nourish Bakery is baked on the morning it is sold, which is why the queue in Fishguard starts before the shelves are full. The shop opened in 2021 as a small coastal project and calls itself a tiny bakery by the sea, but the counter is serious work: organic sourdough, laminated pastry, focaccia and a short run of sweet and savoury bakes, all made by hand on site.

Organic flour and a laminated case

The sourcing is the spine of it. The bakery works with 100% organic flour, Estate Dairy butter, locally farmed eggs and milk, and organic fruit in the pastries, which supports bread, lamination and seasonal fillings rather than a long café list.

The seasonal danishes are the piece that draws attention, built on lamination that repays the early start. Beside them the case runs to a carrot-cake cruffin, a rum and raisin croissant pudding and a leek and Stilton savoury, so there is richness on the sweet side and one clear savoury anchor. Nourish is listed in The Good Food Guide Britain's Best Bakeries 2026 and has been named a Good Food Guide Local Gem, recognition tied to craft and daily freshness rather than scale.

Early morning is the whole point

This is a bake-and-sell operation, not an all-day menu. The ovens set the timetable and demand does the rest: people queue along the street for what has just come out, and the best of the case can be gone within the morning. Timing and scarcity are part of the experience rather than a complaint about it.

The room is small and the welcome is personal, with one of the founders running front of house and the other on the bench. The path here ran through commercial baking in Bristol before the move to the Welsh coast, and the shop still reads as that plan realised at a size the town can queue for.

Start with the danish, then the bread

If the seasonal danishes are out, start there, because they show the lamination the bakery is known for. The carrot-cake cruffin and the rum and raisin croissant pudding sit on the richer, croissant-led side of the case, while the leek and Stilton savoury is the more substantial order. Focaccia belongs in the same conversation for anyone looking past sweet pastry.

Do not treat the sourdough as an afterthought. It is all organic, made by hand on site from 100% organic flour, and it is the clearest daily expression of what the bakery actually does.

Frequently asked questions

What should I order at Nourish Bakery?

A seasonal danish, if any are left, because the lamination is what the bakery is known for. The carrot-cake cruffin and the rum and raisin croissant pudding are the richer sweets, the leek and Stilton savoury is the substantial option, and a loaf of the organic sourdough is the clearest read on the daily baking.

What is the bread programme like?

All the bread is organic sourdough, made by hand on site with 100% organic flour and baked fresh each morning. Lamination gets the same attention, with seasonal danishes and croissant-based sweets, and focaccia sits alongside as the other daily bake. Butter, eggs and milk come from local farms, and pastries use organic fruit.
