Why go

Long fermentation, and flour with a name on it

Northern Rye is a small-batch microbakery in Ouseburn, baking in Newcastle upon Tyne since 2018, and the bread is where the argument sits. Loaves run to sourdough and rye, made from scratch on the premises without artificial additives, with dough left to ferment for as long as twenty-eight hours. The baguettes go further still, built over a three-day process and baked fresh each morning.

The ingredients carry names rather than adjectives. Wildfarmed flour, grown regeneratively, and Estate Dairy butter are the two the bakery puts forward, and they explain a good deal about the laminated side of the counter. Wholesale work sends the same bread out to kitchens across the region, which is part of why the retail case reads as production-led rather than as a shop baking only what it can sell by noon.

Viennoiserie, filled specials and a counter that does lunch

Alongside the loaves, the case extends into croissants, pain au chocolat, cinnamon buns, pecan danish, orange swirl pastry and sausage rolls. The specials are where the pastry kitchen shows off: the tiramisu knot is a croissant knot filled with mascarpone cream, coffee and molasses caramel, finished with chocolate and coffee crumble.

The savoury side is built on the same bread. Toasties are made with the bakery's own sourdough and local cheeses, and the jambon-beurre puts Parisian ham and cornichons into a baguette with cultured butter. Sandwiches, vegan and vegetarian lunch options round it out, so the counter carries a full midday order rather than only a morning one. The Good Food Guide named it among Britain's Best Bakeries for 2026.

A working bakery-café by the water

The Ouseburn shop is a small outlet just into the valley, close to the river, with seating inside and out and a very dog-friendly welcome. It reads as a working bakery-café: the counter, the fresh bakes and the coffee shape the visit, and the walk along the water is usually part of it. Northern Rye also runs beyond this branch, with Harbour House and North Shields Bakehouse in the same family.

Order the bread if you are taking something home, a croissant or the tiramisu knot if the visit is a coffee stop, and a toastie or the jambon-beurre if it has turned into lunch. That combination is the whole point of the place: serious fermentation behind an everyday walk-in.

Frequently asked questions

What should I order at Northern Rye?

Take home a sourdough or rye loaf if the visit is a bread run, since the long fermentation is the core of the bakery. For a coffee stop, choose a croissant or the tiramisu knot, a croissant knot filled with mascarpone cream, coffee and molasses caramel. At lunch, the toasties and the jambon-beurre are strongest.

What makes the bread at Northern Rye different?

Time and flour. Dough is fermented for up to twenty-eight hours and the baguettes are built over three days, all baked from scratch on the premises without artificial additives. The bakery works with regeneratively grown Wildfarmed flour and Estate Dairy butter, and supplies the same bread wholesale to kitchens around the region.
