Why go

The cookies, and the word behind the name

Start at the cookie shelf and the rest of the bakery makes sense. Mah Ze Dahr takes its name from Urdu, where mah-ze-dahr points at the elusive quality that makes food memorable, the thing you keep coming back for without being able to name it. Umber Ahmad founded the bakery on exactly that idea, opening the first storefront in Greenwich Village in 2016 and adding New York City addresses since. Her route to pastry was not a culinary school: she grew up in a Pakistani family, studied genetics at MIT, took an MPH in international health policy at Michigan and an MBA in finance at Wharton, then worked in investment banking before testing recipes in a one-bedroom apartment from 2013 onward.

A daily bakery counter with coffee attached

The rooms are casually upscale and busy with people buying coffee and something to go with it, and the rhythm is a bakery stop rather than a meal. A latte or a cappuccino, made with La Colombe, and then a scone, a cookie, a slice of cake or a doughnut that can stand on its own.

Ahmad remains the central figure as founder and executive baker, and her method leans on testing and ingredient work rather than formal pastry training, with the precision aimed at texture. Early industry backing came through Tom Colicchio, whom she met through the investment work she was doing with chefs and food brands.

Cookies, then the doughnuts and the cake

Cookies are the entry point, and the chocolate chip is the one to judge the bakery on. From there the case runs to chocolate chip scones, viennoiserie, brioche doughnuts, cheesecakes, the Devil in Ganache chocolate cake and the namesake Mah-Ze-Dahr bar.

The brioche doughnuts are the item most tied to the bakery’s own idea of itself: hard to pin down, which is the point of the name. Devil in Ganache leans into chocolate richness and is the choice when the order is a proper dessert rather than a pastry. The Mah-Ze-Dahr bar is the item that carries the name outright and the most direct thing to take away. Celebration cakes cover the occasions people plan around, engagements and weddings among them, which is the other half of a bakery that started as a private project and became a New York address.
