Start with the Orea filter coffee if there is a lot on the bar that sounds alive, especially an Ethiopia, a washed Kenya or one of the more fermented Rwandan coffees. The method gives the cafe space to show acidity, grain, fruit and texture without burying the coffee in milk. If the El Salvador is running and the bar points it toward milk, a flat white is the safer second order, because that cup has been described as holding its character through dairy.
