Bakes are small batch and announced in advance, so the pattern is to order ahead and turn up when the loaves come out, which is how the regulars work it. The baker's background shapes the rest: born in Liverpool to Hong Kong parents, she studied medicine at the University of Oxford, started making sourdough in her final year, then trained formally in bread and pastry and spent a summer as a pastry chef at St. John.
