The day’s loaves sit behind the counter in plain view, which is the clearest statement Loaf Lounge makes about itself. Sarah Mispagel and Ben Lustbader, a husband-and-wife team, coined the phrase “bread-focused cafe” for the Avondale room they opened in 2022, and the bread came first in fact as well as in branding: the recipes were honed at the couple’s Superkhana International pop-up in Logan Square before the cafe existed. Honey oat and country sourdough anchor the programme and are the two loaves to know, one soft and mild, the other the house’s long-fermented benchmark. Mispagel worked as a pastry consultant on The Bear, her desserts appeared on screen, and the chocolate cake went onto the Loaf Lounge menu after the show’s creator, Chris Storer, encouraged her to sell it. That connection is the loudest signal around the bakery, though not the only one, since the cafe also made a New York Times national bakery list in 2024. Her own background runs through Sepia and Proxi, while Lustbader cooked at Giant under Jason Vincent, which explains the split down the middle of the menu: bread and sweets from one side, savoury cooking from the other.

The room is compact and informal rather than restaurant-like, a few tables and counter seating around a mix of bread, pastry, coffee and savoury plates. The rhythm is breakfast and lunch: breakfast sandwiches with farm-fresh eggs and sausage on English muffins, a summer salad, cured salmon, poblano fritters. Drinks are specific too, with Four Letter Word Coffee and Volition teas on the counter, and a short alcohol list that started with Miller High Life before growing into cocktails and wine.
