A roastery's tasting room, in a very old building

Keen Coffee Bar is where Keen's own roasting work gets poured, and it is set up to be tasted rather than simply drunk. The bar occupies one of Utrecht's oldest retail buildings, with a large central counter and table seating tucked into the perimeter corners, so the room organises itself around the brewing rather than around a seating plan. The fit-out is deliberate: ash wood, coated metal and ceramics, blue and terra contrasts, custom benches, Penumbra light installations, Align cups and Tangent cabinets. All of it points at the same idea, which is that the coffee is the exhibit. The roasting is light, the lots move, and the baristas expect to talk you through whatever is open.

Fifteen coffees and a flavour wheel

The list runs to roughly fifteen coffees from the Keen roastery at a time, including a direct trade collection, and filter service rotates through single-origin lots rather than holding a fixed house selection. That makes ordering a bigger decision than black or white. A flavour wheel is used to steer people toward the profiles they actually like, and side-by-side comparison is normal here: two pour-overs at once, brewed to be argued about. Espresso, cappuccino and filter are all served, and the milk drinks are made properly, but the bar's centre of gravity is the brewed cup. Something sweet is kept alongside the coffee, and it is a companion rather than a menu in its own right.

Start with filter, then compare

Filter is the clearest expression of what Keen roasts for, so start there and ask which lots are running. If you want something shorter, espresso shows the same roast under pressure; if you want it softer, take the cappuccino. The best use of the bar, though, is comparison. Order two brewed coffees from different origins, taste them next to each other, and let the barista explain what changed between them. Add a pastry if you want one, but keep the order coffee-first, because that is the sequence the room is built for and the sweet things are chosen to sit behind the cup rather than in front of it. Beans are sold to take home, which makes a visit here a way of choosing what you brew for the rest of the month rather than a single cup in the middle of Utrecht.
