Why go
Ask for the Alternate Espresso and you will wait, because it is pulled on a manual lever machine and the queue moves at the speed of the barista's arm. This is Intelligentsia Coffee's first coffeebar outside the United States, opened in Seoul's historic Seochon neighbourhood in February 2024.
Brewed to order, one cup at a time
Read the menu by preparation rather than by a long list of named drinks. Intelligentsia's programme is built on fresh-roasted, direct-trade coffee bought in season, and Seochon turns that into made-to-order service: a Brew to Order format with individual brewing through Aeropress or a lever espresso machine.
The Alternate Espresso is the branch's most distinctive preparation, made on that manual lever machine, and it can take around thirty minutes. If you want the beans without milk in less time, order single-origin hand-drip coffee. The flat white and the Americano cover the everyday ground, and they are not always made with the same beans, so the two are worth trying on separate visits.
A hanok reading of a coffee bar
The room is a renovated historic building in one of Seoul's oldest neighbourhoods, reworked as a modern reinterpretation of a traditional Korean hanok in wood, glass and stone. A glass ceiling brings in a lot of daylight, the floors are wooden, and a sarangbang reference nods to traditional Korean spatial planning.
The result feels deliberate rather than grab-and-go. Local Korean design meets contemporary specialty coffee, and made-to-order brewing sets a slower rhythm than a Seoul chain counter. It is a bright, calm bar where the building and the brewing are doing the same job.
Alternate Espresso first, then the caramel financier
For a focused order, start with the Alternate Espresso if you have the time to spend on it. It is the drink that separates this branch from any other Intelligentsia bar, and the lever machine gives it a different texture from a standard pump shot.
If time is short, take the single-origin hand drip or whatever is on Brew to Order, then the flat white for milk and the Americano for straightforward black coffee. Alongside the cup, the caramel financier is the pastry to know, one of the handmade desserts made for the bar. Coffee first, financier second, is the order that shows the place at its best.

Frequently asked questions
What is the Alternate Espresso at Intelligentsia Seochon?
An espresso pulled on a manual lever machine rather than a standard pump group, which gives it a different texture and a slower service. It can take around thirty minutes, so order it when you have time to sit. It is the preparation that most distinguishes this branch from other Intelligentsia bars.
What coffee does Intelligentsia Seochon serve?
Fresh-roasted, direct-trade coffee bought in season, brewed to order. The Brew to Order format covers individual Aeropress and lever espresso preparation, and single-origin hand drip is the clearest route into the beans. The flat white and the Americano are the everyday orders, sometimes made with different coffees.
